Researchers has discovered over twelve
different flavonoid compounds in spinach that have anti-inflammatory, antioxidant and anti-cancer properties.
In turn, it has numerous anti-inflammatory properties, which can be attributed to several
different flavonoid compounds such as gossypin, gnaphalin, hesperidin, hibifolin, hypolaetin, oroxindin, and quercetin.
Scientific study has identified no less than 13
different flavonoid compounds known as methylenedioxyflavonol glucuronides found in spinach which function as anticancer agents.
The researchers also designed a computer - based model that allowed them to predict how
different flavonoid compounds in plants can regulate the SIRT6 enzyme.

Not much is known about the specific
compounds responsible for the medicinal properties of melon, although
different types of
flavonoids have been identified and are believed to play a role in their antioxidant properties.
