I actually
used different frosting for these cupcakes — some had a marshmallow frosting and some had an almond flavored frosting — a nice little surprise!
Why did we ever make batches of 12, 24, 36 of the exact same cupcake and frost them with the exact same frosting when we could've frosted 20 different kind of cupcakes with 20 different frostings??

I am going to keep it simple by making the cookies the night before (from pre-cut dough) and setting out a
few different frostings and sprinkles.
I've made this cake twice now with 2
different frostings (chocolate buttercream and a Baileys buttercream) and both recipients have said this is the best chocolate cake they've ever had, even better than Portillo's chocolate cake (Midwest / Chicago restaurant).
I made 1/2 the recipe for cupcakes w /
a different frosting (whipped chocolate w / coconut cream).
I was thinking maybe tequila with the lime flavored frosting or cake flavored vodka with
a different frosting.
Not only is it delicious but it is entirely grain - free (we can't eat gluten), and the cake is also dairy - free if you use
a different frosting recipe (which we do due to dairy allergies).
(Remember how I had to make four
different frostings?)
This cake recipe works for both but I do prefer
the different frosting variations since the whipped frosting is a bit thinner and seems to drizzle better over the individual bars which are a little thicker than the sheet cake.
I think you have to REALLY like salted caramel for the frosting, so you can certainly trade that for
a different frosting if you like.
Next time I think I'll think I'll try
a different frosting, but man yours look fantastic!
