Granola bars tend to be very processed and high in sugar, with

You might enjoy it with more vanilla, less cinnamon, a little less or more salt, a little less sweetener,
a different sweetener (I think maple syrup would be good)... So add small amounts of the flavorings and taste as you go (remember that you can always add flavors, but once they are added, you can't take them away).
And next time, I'm going to make it with
different sweetener than honey.
I wish
a different sweetener would work in this recipe, but the consistency just works best with rice syrup.
If I told you to buy three
different sweeteners for one recipe, no way you'd make the recipe.
This is a really delicious alternative to cheesecake and lends itself to different kinds of berries as well as
different sweeteners.

You could use
a different sweetener, perhaps honey, maple syrup, or maple sugar, but I don't think coconut butter would add enough sweetness and it would create an odd texture too.
I've made these with both maple syrup and honey, and it should work fine with both... Perhaps try

Depending on your preferences, you could leave out the stevia or use
a different sweetener as desired.
If you'd prefer
a different sweetener, honey or pure maple syrup are awesome choices.
You can definitely omit the stevia or use
a different sweetener if desired.
No two batches are ever the same; I love changing it up with
different sweeteners and spices depending on my mood.
