Needless to say, the
quinoa meatballs are totally
different than what I'm used to, but the sentiments behind the meatball remain the same.
I love using
quinoa flakes but they do have a
different texture and flavor
than oats, and
quinoa flakes are quick cooking so sometimes it makes the recipe work differently.
How to cook / / simply bring
quinoa and water to a boil and then cover and simmer for about 20 minutes until all water is absorbed and
quinoa has a fluffy texture (white
quinoa) Ratio / / 1 cup of
quinoa: 2 cups of water The ratio for black and red
quinoa is
different than white as you may need more water.
Having eaten a lot of white and red
quinoa over the last few years, I didn't really expect this enigmatic grain to be any
different than the other two varieties.
Rather
than rush out and buy several
different flours, plus
quinoa flakes, I'd rather try it with the stuff I have.
Puffed
quinoa is barely larger
than its original size, though its texture is markedly
different.
You could see all the
different grains which made for a more interesting porridge
than just oats (or
quinoa!)
So this version of
quinoa mac and cheese is a bit
different than my others.
