of my favorite pasta
dishes, this
dish is light and creamy (if you can believe it) and extremely satisfying.
Butternut squash gets spiralized into long, tender «noodles» for a lower - carb version
of this creamy, cheesy pasta
dish.
This latest one is based on a
dish called Ginataang Sitaw at Kalabasa, which translates to Green Beans and
Butternut Squash in Coconut Milk, and it is one
of her specialties.
The sweetness
of the
butternut squash really comes out when it is roasted, and the tart cranberries, creamy goat cheese, and crunchy almonds come together to make this unique, easy side

Key points if you like your Chili thick (ie to put in tortillas etc): - Do nt add the beer - Do nt use brisket (lean stewing beef instead)- Roast the
butternut squash ahead
of time, before adding to
dish - Cook ahead one day and then reheat for when you want to eat it.
I ran out
of delicata
squash so this was
butternut and it wasn't nearly as tasty as yesterday's delicata
dish.
Roasted
