did make a classic rookie mistake, as this was my first time cooking with coconut

You
do need a lot of liquid for the coconut flour, but between the
eggs, banana
and coconut
oil they end up nice
and moist.
If you don't have a food processor, use room temperature
eggs so the
eggs don't make the warm liquid coconut
oil cold
and chunky in the batter.
Also, I didn't have chia or flax seeds so I used Bob's red mill
egg replacer
and a little flax
