Anyway, I had purchased some pears that were ripe and ready to be used, and I didn't want to
do poached pears with them, so pear clafoutis just sort of made sense.

Poaching fruit in of itself is pretty easy — all one really
does is simmer a fairly meaty fruit like apples or
pears in a sugary syrup concoction until beautifully tender.
Certainly, if you want to forgo
poaching the
pears and opt for a commercial crust,
do.

The cheesecake requires a few steps — baking the crust, making and baking the filling, mixing up the sour cream topping, and
poaching the
pears — but all can be
done ahead of time, including the whole cheesecake which keeps beautifully, refrigerated airtight, for several days.
