Hi, I think it's largely to
do with the food processor you use.
I chose to grate the vegetables as it is both quick to
do with a food processor — probably quicker than dicing them all — and helps them cook evenly and more quickly.

I need to make them again as I don't have my
food processor with me at the moment and so mashed the sweet potato and chopped up dates
with a fork which I think led to a denser consistency.
Since I sent the message I actually made a spontaneous purchase on a little Bosch mmr08 400w chopper /
food processor with a push down top to start, it a bit bigger than a normal chopper and smaller than a normal
food processor so easy to store and clean and only # 29.99 it made your energy balls fine, don't know how long it will last but seems quiet sturdy so a good place to start when you have a small kitchen and not ready to invest in a more expensive model.

Once the aubergines have cooked, slice the green end off them and then place them in your
food processor with all the remaining ingredients and blend until smooth and creamy — I love the skin of the aubergine as I think it makes the texture nicer, so I always add it but you don't have to.
