squash and avocado salad!!!! My TOP TIP is when using
butternut squash or sweet potato don't borher
with peeling and chopping just put in a hot oven WHOLE for 30 - 40 and voila!!!! All soft and easy to chop!!!

We had about 4 or 5
butternut squashes sitting in the pantry from our CSA that I was getting worried would go to waste so I decided that soup is the quickest think to
do with them.
You can garnish this simple
butternut squash bisque
with chopped cilantro (which is really tasty), but it seems like I garnish a lot of recipes
with cilantro, so I didn't go there this time.
I roasted a large
butternut squash last week, now I know what to
do with part of it.
I didn't have the
butternut squash so instead I peeled and cubed sweet potatoes and tossed them in oil
with about a tbsp of cumin seed.
What a great idea, I have leftover
butternut squash that I haven't figured out what to

A typical full day of eating for me looks like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes
with bacon or homemade sausage Iced Coffee
with coconut milk Lunch (this is usually my largest meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a sweet potato or
butternut squash Snack: apple
with almond butter or a handful of macadamia nuts Dinner: A large salad
with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a meal, if i
do that though I would add a bit of protein
with it.
I
did happen to have the ingredients to make this curry dish though
with butternut squash and chickpeas.
I love this time of year
with all the gorgeous Autumnal colours and my
Butternut Squash, Turmeric and Coconut soup doesn't disappoint.
I love adding extra bits to my soups too, and quite often
do a
butternut squash soup topped
with pan fried garlicy mushrooms and a sprinkle of toasted and spiced
squash seeds.
But man, the delicata
squash (although
butternut or sweet potatoes will
do), roasted at 400 degrees
with just a little olive oil, salt, pepper, and thyme is so delicious it's hard to save enough to even MAKE a bowl.
When the
butternut squash is
done, add to the bowl
with the wheat berries and quinoa.
We ate the ramekin full
with leftover baked
butternut squash, and the stuffed acorn
squash has to wait for tomorrow:) I had a slice when it was
done and YUM.

butternut squash with 1/4 teaspoon chipotle powder (or use smoked paprika if you don't like spicy).
Hi Lauren, this sounds pretty good, though I
do make a similar cheeze sauce
with either cauliflower or
butternut squash as the base.
So when I discovered how versatile
butternut squash was (you can literally
do anything and everything
with it) I was a very happy camper.
I love the
butternut squash muffins and have now made them 4 times now but my son wanted me to make something
with pumpkin but believe it or not he doesn't really like chocolate in general very much so I may even try the beet - carrot muffins without the carob and cocoa because I like the idea of having beets and carrots in there.
I didn't have garlic powder so I used chopped fresh garlic
with the
butternut squash, and I crushed the fresh garlic for the dressing.
Once
butternut squash is
done, toss it right into the bowl along
with the pecans.
Once
done, mix this
with the
butternut squash paste for the stuffing.
I didn't know that baked
Butternut squash with Olive Oil is tasting so good.The children enjoyed the salad too.
