with occasional stirring until broth has «disappeared» into the rice, then add more liquid until rice is barely covered again and stir / Proceed in this manner until rice is tender and creamy, about half an hour / Heat up additional broth or
water if a little more is needed / When rice is tender or nearly so, adjust seasoning, add seafood, if any, and the rest of the lemon / Cook just a few more minutes until seafood is
done / I like risotto «juicy» so I stop cooking while there's still plenty of liquid present / Optional: stir in 2 T of butter / Garnish
with fresh herbs like cilantro, dill or parsley, a slice of lemon.
For an easy way to make your own crispy tofu
at home, simply
do the following: (1) press a 14 or 16 ounce block of extra firm tofu for
at least 30 minutes to remove excess
water (lay tofu on a cutting board, top
with lots of paper towels, and then top
with a heavy book or pot); (2) chop the tofu into cubes; (3) toss tofu
with 1 1/2 tablespoons of coconut aminos (or soy sauce or tamari) along
with 1 tablespoon melted coconut oil and red chili flakes; (4) add in 1 1/2 tablespoons cornstarch and toss to coat; (5) spread tofu cubes out on a parchment paper - lined baking tray; (5) Bake
at 400 degrees Farenheit for 25 minutes until crispy and golden on the outside, tossing halfway through cooking time.
I
did have trouble
at first
with a crumbly crust, but
with the addition of a flax egg (just ground flax seed +
water) the crust holds together beautifully.
I used the
water bath method to help prevent cracks — if you
do as well, wrap the outside of the cheesecake pan tightly
with at least two layers of tin foil.
I
do turn down the heat so that the
water is
at a low boil, and
with the pot covered, I've never had it run dry.

Roast
at 350 degrees, basing
with a little
water and then pan juices about every fifteen minutes until
done.
Basically what you
do is jut put them in cold
water with some salt and let them sit in there for
at least 30 minutes and rinse the
water once
at least too.
All that's left to
do at lunchtime is to fill the cup
with hot
water, cover and let steep for 2 minutes.

do 1) prepare the pie dough
at least 2 hours ahead that way it has plenty of time to chill.
I rinse the pan once I was
done with hot
water and barely needed to use any soap
at all.
I've
done a raw tart shell
with almonds and dates and I added just 1/2 to 1 tbsp of filtered
water and it was a little easier to blend and handle and it didn't harm the consistency
at all - but I was using a food processor.

doing both in the

at once.

water, a couple tablespoons
at a time, and blend into dough by tossing
with your fingers (don't knead the dough).
* 2 cups raw, organic walnuts, toasted in a 300 degree F oven for 20 minutes and then cooled slightly (if you have time to soak your walnuts in
water overnight first, go ahead and
do so... this can help make them easier to digest; if you
do soak them, rinse them in clean
water and pay dry before toasting them, or skip the toasting step) * 1 tablespoon toasted walnut oil (or use a different neutral oil like grapeseed) * 1 tablespoon pure maple syrup, plus more to taste * 1/4 cup unsweetened, unsulphured dried cherries, chopped (I bought mine
at Trader Joe's) * pinch or two of fine Himalayan or sea salt (start
with one pinch, blend, taste, and add more if needed) * 1 - 2 tablespoons cacao nibs or finely chopped dark chocolate
(I
do about 12
at a time) Remove from the
water with a slotted spoon and place on a cookie sheet
with silpat or parchment paper on it.
Milk Chocolate Ice Cream
with Reese Whoppers (Adapted Ice Cream Recipe from The Perfect Scoop but it was my idea to add the Reese Whoppers;)-RRB- Ingredients 3/4 cup milk chocolate and 1/4 cup semi sweet chocolate, finely chopped — the original recipe called for 8 ounces of milk chocolate 1 1/2 cups half and half 1 1/2 cups 2 % milk 3/4 cup sugar Big pinch of salt 4 large egg yolks 2 teaspoons vanilla — the original recipe called for Cognac, but we don't have fancy things like that
at my house 1/2 cup Reese Whoppers, roughly chopped Directions Combine the chocolate and cream in a large, heatproof bowl and set over a saucepan of simmering
water (I can't lie I just put it right in a saucepan over medium heat and skipped the simmering
water).
I totally forgot to list this, but if you have a crock pot you can even just throw some breasts in
with some
water and cook the chicken while you're
at work and then all you have to
do when you get home is shred it!

I've
done a similar fermented cashew recipe which blends the cashews
with water in the Vitamix and then just sit
at room temp for a couple days.
The dough came out a little sticky
at first, but I think that's because I didn't add the
water gradually (like one normally should
with a pie crust!).
Place the cooked chickpeas (reserve a handful for garnish), cooked garlic (and if you love garlic as much as we
do, add 2 cloves of raw garlic
at this stage) in a food processor
with the remaining ingredients and half a cup of the cooking
water.
Anecdotally, this is how I made Squash Risotto for four: * In a large saucepan melt 2 tablespoons of butter and sauté 1/4 cup finely chopped onion, scallion or leek for a few minutes / then add 1 1/2 cups Arborio rice to the mix / continue to sauté for five minutes along
with a finely chopped teaspoon of sage or rosemary, stirring often / meanwhile, in another saucepan heat 2 1/2 cups of stock or plain
water to a simmer and hold / add 1/2 cup white wine to the rice mix and let it cook away until liquid almost disappears / add a teaspoon of salt and more if needed when risotto is
done / begin adding simmering liquid 1/2 cupful
at a time, stirring until liquid is nearly cooked away / add additional liquid 1/2 cup
at a time and, once again, stir and allow to cook until liquid is almost gone before adding more.
