I actually
do make a vegetarian chili with
bulgur wheat and it's delicious so I'm sure that will work.
White
wheat does not contain the tannic acid that is found in
bulgur made with red
wheat and that imparts a bitter taste.
In my version I
did a blend of whole
wheat couscous and
bulgur wheat cooked in low sodium vegetable broth, added chickpeas and finished it with with grated parmesan.
Just made this — didn't have
wheat berries so i just used
bulgur.
Hmm... I haven't tried it before but think it would be difficult to
do a complete substitution because the
bulgur is a whole grain with texture compared to a ground
wheat flour.
If you have never eaten
bulgur wheat before,
do give it a try!
Also it was a bit crunchy I think because I didn't ground the Chia seeds and also I think the rolled oats needed to cook longer like in the same stage as the
bulgur wheat.
If you don't like cauliflower you could easily sub
bulgur wheat, quinoa or any grain in this recipe!

Bulgur, quinoa, or whole
wheat couscous are good substitutes if you
do not have spelt for this dish.)
Don't forget other whole grains, such as
bulgur and whole -
wheat couscous, to mix it up a little.

I
do agree that we eat too much
wheat and refined carbs, but I think whole grain foods like quinoa, barley,
bulgur, oats, etc. can fit into a healthy food plan.
I
do find, however, that
bulgur is one of the few
wheat products that upsets my stomach, and I love the toothsome chew of the kamut, and the nutty flavour it gets here from being toasted in olive oil.
