The
brine that's used to
do the
pickling contains certain bacteria in it.
Pickled salmon
pickles much the way herring and
pickles do, in a
brine.
A Ziploc bag will be your friend here, as all you have to
do is place the
pickle juice
brine and the chicken inside and let them get acquainted for a few hours.
If you don't have pepper
brine (which also means you'll have to forgo the
pickled peppers on top), another vinegar will work well, like apple cider or red wine.
Granted, the
pickles do lose some of their vibrant green color after a few days in the
brine, but the benefit to refrigerator
pickles is they retain all their crispness.
P.S. Don't toss the jalapeño
pickling liquid: use the flavorful
brine in place of vinegar in dressings.
