Since my first batch of muffins was tasty, but small and flat - topped, it was time to experiment and find out how to make
dome topped muffins.
I've been trying out a lot of techniques to help make a muffin that is light, fluffy and has a
nice dome top like a regular muffin.
The
gigantic dome top also makes for a perfect climbing surface while your bird is out of its cage.
They're soft and fluffy
with domed tops, and positively bursting with blueberries — there are two whole cups in the recipe!
A sprinkle of brown sugar, oats, and cinnamon accentuates the sweet little

I found besides adding baking powder (baking soda makes it taste too salty) «fluffing» my egg whites was the key to a

Once your cakes have been baked and cooled on wire racks, turn them out onto a parchment - lined cutting board or clean work surface and trim
the domed tops off so they're nice and flat.
In the future, I will let the bread rise a bit more on the second proof (it had
the domed top of a more conventional loaf and lacked the desired square shape) and add a touch more salt.
