I found that sprinkling the counter and the dough with a bit of flour helped quite a bit, and I popped
the dough in the freezer for 3 - 4 minutes between each rolling out
having
dough in the freezer would be so convenient.
I ended up putting
the dough in the freezer for an hour or two (I had only refrigerated it for 2 hours before cutting so maybe that was part of the problem) and it worked a little better.
