Without the egg yolks, the filling is a beige color — the freeze -
dried banana does oxidize slightly, but it's still just as tasty and good for you!

Here are some thoughts on variations and substitutions — The
bananas make them moist because if they are
dry they don't taste near as good.
Hahaaa... I agree as I had to cook my still VERY moist
banana nut loaf for over 1.5 hrs when the original recipe called for your typical 1 hr... The darn thing just didn't want to
dry up... But I ended up removing it from the cooling oven after I came back from running errands and even though still «wet», it tasted awesome... I was looking for a recipe that called for coconut flour as I thought that might improve on the absorption capability and came across your recipe... sounds perfect!
I have made something so similar to this, but I used
dry banana bread, but it
did not have that caramel sauce..
I think these tasted good, i used more than a few tablespoons for each one and i
did notice the middle to feel
dry or that uncooked kinda feeling and i wonder
did i not mix well enough, other than that i warmed
banana on a pan and put them on with ground flax and it was really food.
I found this step to be totally worthwhile, but if you're not up to it you can
do any of the following: (1) simply omit the chips, in which case the granola will be nonetheless delicious, (2) buy a bag of
banana chips and toss them in, though watch out for fried
banana chips, which you are welcome to use, though they will add significantly to the recipe's fat content, or (3) throw in some alternative source of
dried fruity sweet and chewiness, like raisins or dates.
Do you think it would work if I substitute for a little bit of mashed
banana, or just skip the

If you don't have a hand mixer, alternatively you can blend the 2
bananas, vanilla extract, coconut oil and almond milk together, and then add the
dry ingredients and continue blending until a consistent texture is reached.

dry ingredients together and ta - da, chocolate chip

banana, pear, mandarin in place of the drained pineapple — raisins and

did as directed except for I didn't use the
dried cranberries but instead added fresh strawberry, kiwi,
banana, blueberries, and chopped cashew.
