bananas for dates (since I am on a low FODMAP diet for my IBS and should not be consuming excess fructose from
dried fruit).
Made with whole, all - natural ingredients, these soft and chewy cookies are filled with lots of

dried cherries.

Not much, really, except for the fact that since I couldn't find fresh mangoes in January to
make my own
dried mangoes, I opted for the
bananas.
Here are some thoughts on variations and substitutions — The
bananas make them moist because if they are
dry they don't taste near as good.
I have
made something so similar to this, but I used
dry banana bread, but it did not have that caramel sauce..
Another option is to omit the freeze
dried bananas and oil and use ground cashews instead — will
make it creamier.
(If mix is too
dry, add another ripe
banana, if it's too moist add more oats) Line a baking sheet with parchment paper and
make little dollops of batter on the sheet.

I
make muffins with the leftover pulp (reference this pumpkin muffin recipe, swap in overripe
bananas for the pumpkin and use a
dry sweetener instead of the maple to compensate for the wet pulp).
Still seemed a bit
drier than other
banana breads I've
made in the past.
Made it first time with fresh blueberries / blackberries / raspberries /
bananas and came out delicious but a bit
dry (used maple syrup).
1) Combine the
dry ingredients (almond flour / meal, tapioca flour, baking powder, salt) in a medium bowl 2) In another medium bowl, whisk the milk, mashed
banana, eggs, vanilla extract, and honey together 3) Slowly add the
dry ingredients to the wet ingredients and mix until combined 4) Pre-heat a non-stick pan and melt a little butter 5) Scoop about 1/4 cup of batter in the middle of the pan to
make small pancakes (the smaller the pancakes, the easier it will be to flip them) 6) Let the pancake cook on one side until it automatically unsticks from the pan, then flip it over until the other side turns golden brown 7) Repeat last step until all the batter is used up 8) Serve pancakes warm with cut

Despite the very
dry powdery texture, once you start mixing the
banana flour
makes for a lovely batter.
I
make myself a cup of Aeropress coffee while I put away the dishes that have
dried from dinner the night before and then sit on the couch with my coffee and half a
banana with pb or almond butter and read blogs or browse the internet.
Mashed
bananas are similar in thickness to pureed blueberries so you most likely won't need to add extra liquid, you might want to add 2 tbs of the
