Don't skip
the dried mint in the dressing, it adds a pungency you won't get by using only fresh mint — that I add to the salad as a bright garnish as well.

The flavor grows with
dried mint so this sauce does well after a rest
in the refrigerator.
Place the
dried mint, chile pepper flakes, cumin seeds, and salt
in a mortar and pestle and pound a bit, long enough to somewhat break up the cumin seeds.

in it, but the secret is silken tofu.When I had my big dinner party last week, I served three different toppings on crostini; this sun -
dried tomato spread with a sprig of basil as garnish, a green pea puree and my homemade rhubarb
mint chutney.
Another great thing about this car mount is that if you need to re-locate it, you can return the suction cup to
mint - condition by rinsing it
in warm water and letting it air
dry.
To serve
in a gourmet treat style: Float three one - inch - size firm white button mushrooms, stuffed side up, roasted under the broiler or on the grill, and stuffed with a bit of chopped roasted tomato, a little minced
