It is important to always go from wet to
dry to avoid overworking your
flour, and
lumps.
The only thing I would change in the assembly is to sift together the
flour, baking powder, and soda to eliminate
lumps in the
dry ingredients — I noticed some of either the baking powder or soda did not incorporate well into the batter.
Make sure the
flour is well combined without
lumps and is
dry.
Combine the
dry ingredients (almond
flour, coconut
flour, sweetener, cocoa powder, salt, baking powder, xanthan gum) in a medium bowl and stir until mixed and there are no
lumps.
Fold the
dry mixture into the wet, but do not fully combine; there should still be some
lumps of
flour.
Mix the
dry ingredients (
flours, oats, xanthan gum, baking powder, bicarbonate of soda, herbs, salt and pepper) in a large bowl, making sure any
lumps are broken down.
Gently fold the wet ingredients and the
dry ingredients until thoroughly combined and no
lumps of
flour remain.

I whisked the
dry ingredients together - this is a good idea to ensure that there are no
lumps of sugar, cocoa or
flour.

lumps — you just don't want any giant chunks of
flour).

dry ingredients (coconut
flour, ground flaxseed, baking powder, bicarb and salt) in a large bowl, ensuring no
lumps are in the
flour.
You always add wet ingredients to
dry to prevent
lumps and the
flour from getting overworked.
Mix
dry ingredients in a small bowl to remove any
lumps from the almond and coconut
flours.

The only thing I subbed was the whole wheat
flour with coconut
flour (I have been on a coconut kick) but everything else was exact and when I mixed everything together, it was just
dry clumps: / I was so confused, and I didn't want to over-mix but there was no way I could just throw these powdery
lumps onto a pan!
