Cut the potatoes into neat chips, rinse under hot water, then
dry on a tea towel.
I saw these glasses

on a
tea towel and allow it to air
dry for about 10 minutes.
If you carefully / gently wash them and then lay them
on a
tea towel to
dry (rather than using a spinner), you can simply roll the
towel up with leaves inside then stick into one of those compost type green bags, they kept for a solid week.
In addition to chilling the
dry ingredients in the mixing bowl, I laid out an ice - mat (the gel kind)
on the counter, covered it with
tea towel and then put my mixing bowl
on top of that when I cut in the butter.

Turn off the heat, cover the pan with a clean
tea towel, clamp
on the lid, and leave for a further 15 minutes to
dry out, though it can be left for up to 40 minutes, if you like.
