Herbie — or rather Ian Hemphill, recognized me
because he sells
dried chiles in addition to literally hundreds of varieties of
spices.
I chose
dried spices,
because more often than not, you have these
spices in your cabinet already.
Many
spice purveyors try to capture the essence of true Jamaican jerk, which is a marinade, in
dry form — but they fail
because the
spices are too overpowering and the delicate flavor is lost.
I use
dried, whole curry leaves from a

because I'm too lazy to hunt for fresh ones.
Because it was not an exact science I can't post the recipe but I will give you the basics of the mustard and you can add your own
dried spices.

Spice Powder along with traditional aromatics and

because I felt the flavors could definitely live up to the bold notes of the gorgeous Yao Ming 2013 Family Reserve Cabernet Sauvignon (and I adore Five
Spice Powder).
