There are lots of tips on the web for substituting liquid sweeteners in place
of dry sugar in baking, but the resource I used was this one.
Maple syrup or honey wouldn't make a great substitution for the date sugar, but any other type
of dry sugar should work well, such as coconut sugar or maple sugar.

white dried sugar cane sugar, with Berkey filtered water (which has alkalizing rocks in it).

If you don't have sucanat (
dried sugar cane) on hand, I suspect you could swap it with brown sugar, since the flavor is very similar.
brilliant... a few changes though, used wholegrain spelt four, took out
