Cauliflower tends to be the rice alternative of choice for many people, but it has never been something that was easy for me to digest and Baby Sweet Potato seems to react negatively when I
eat it so instead I decided to use
white sweet potato and rutabaga.
So, for the next 14 days, I can
eat only turkey, pork, eggs, sole, tuna,
white potatoes, tomatoes, green beans, lettuce, asparagus, carrots,
cauliflower (cooked), onion, peas, apples, bananas, mangos, grapes / raisins, blueberries, pineapple, lemon, grapefruit, coconut, pecans, and peanuts.
Broccoli has that guilt - inducing green hue that tells you to
eat more of it, while
cauliflower is a pearly, milky, innocent
white... but they're from the same cruciferous family (Brassicaceae, right?)

I challenge you to introduce these
cauliflower mashed potatoes to someone in your life, chances are they will have no idea they are not
eating white potatoes.
Instead of feeling bloated and stuffed after
eating white rice, you'll feel full and satisfied with
cauliflower rice.
