Coconut flour pancakes are a healthy breakfast for anyone
eating a paleo or gluten free diet.
A
coconut flour pancake will affect your body much like a regular
pancake, because once you make something into a
flour it behaves as a
flour, as a grain actually, and that's going to make your body think it's still
eating grains.
Coconut flour pancakes are one of the few things I actually CAN
eat without worrying about sugar content, gluten or dairy — plus, I don't have to give up my
pancake - tooth.
Firstly, it's important that you get the extra virgin organic
coconut oil if you'll be
eating it plain on top of
coconut flour pancakes — otherwise the taste will be awful.
That's coming from someone who does
eat grains, is skeptical of
coconut flour, and knows his way around a
pancake.

I wouldn't make a caffeinated version for the kids but I do plan on experimenting with the tapioca /
coconut flour ratio to find a paleo
pancake the kids will
eat.
