I realised a few weeks ago that I was feeling very heavy from eating such sturdy winter foods (especially Scottish food, you can imagine...) and so I promptly made a salad.
Yesterday was about as homespun as they go;) Ate breakfast at home, went to church, came home for leftovers, went to an open house, took Maggie to the park, made some fun food items, cleaned the house, worked on laundry, switched summer — > fall / winter clothes, and made dinner!
I know it's not officially spring yet, but the freshness in this dish is a welcome change to the winter foods we've been eating for the last few months, that's for sure!
