My mom is From Costa Rica and I grew up
eating yucca as a soup ingredient.
We would
eat the yucca fries with cayenne pepper when we came home from school.
Some people worry when they hear the word «yucca,» because they know that it's not safe for a dog or cat to
eat a yucca plant.

So if you prepare your fresh
yucca root this way, you won't die... promise Although, I am the girl who
eats «potentially» dangerous foods without a second thought (i.e. mango skins, sprouted beans, etc.) In all seriousness though, these baked
yucca (cassava) fries will change you life.
My family and I have always
eaten chimichurri with
yucca fries, I am SO EXCITED to try this with the tempeh!!!!
Try
eating more sweet potatoes, yams, carrots, parsnips,
yucca, beets, rutabaga, turnips, jicama and butternut squash.
Meaning anytime you would
eaten a whole bunch of grains in your diet,
eat greens instead and if we want to have a little bit more carbs because you need more carbs because it fits you better metabolically, then we can add some
yucca or we can add some sweet potato or we could add some plantains or we can add some pumpkin or some squash.
Second, add «fermentable fibers» to your diet, which are also called prebiotics (sweet potato, yam,
yucca, etc.) and
eat a lot of fermented foods like kefir, sauerkraut, and certain types of yogurt (but most yogurts found in your grocery store are simply milk with sugar and are NOT healthy) You can also supplement with probiotics, but make sure to start slow and build up.
Important note about my view on carbohydrates: In general, I find that dense sources of whole food carbohydrates such as sweet potatoes, purple and new potatoes, beets, all types of squash, cooked carrots, legumes (when tolerated well), boiled
yucca, fresh fruit, etc. are wonderful sources of nutrition when
eaten in the correct portions!
While it is true that the
yucca plant is poisonous, its roots are safe to
eat.
