Toasting enhances it, I think, by bringing out the flavor of the fruit and nuts, and crisping the
outer edges of the bread slightly.
Spread 1 tablespoon pesto mixture on untoasted side of each bread slice, making sure to spread it slightly
over edges of bread.
place the carrot rounds flat onto the bread slice (along the
bottom edge of the bread) with one in the middle slightly higher than the others.
Once the crostinis toast on the bottom, flip them over for another 60 seconds to toast the
outer edge of the bread (the center will be insulated by the garlic and basil and not toast before the outside is burnt).
Two blocks, shallow plastic containers or other objects that can be used to prop up one
edge of a bread pan to a height of roughly three to five centimeters (Make sure both items are the same height and that these objects can get wet.
Transfer the pan to a rack and cool for at least 20 minutes before running a knife around

2 Stuff 2 slices of the ham into each pocket, being careful not to break
the edges of the bread.
