If you want
an egg free version then replace the eggs with flax or chia eggs (1 tbsp ground flax or chia seeds with 3 tbsp water per egg to replace).
I used Trader Joe's store brand gluten free all purpose flour mix (mainly a mix of rice flour & starch) and followed your directions exactly (
the egg free version with ground flaxseed), these turned out terrific!
and when i re-introduced a gluten, dairy, soy,
egg free version, it just wasn't the same.
