For over a decade now, we have narrowed our sights
on an
egg substitute that not only replaces
eggs for baking and emulsifying, but also acts and tastes like real
eggs when scrambled and cooked in omelets and
frittatas.
That beautiful farm - to - plate glory includes fresh, organic
eggs in the daily
frittata; roasted, local pork belly in sandwiches; and truly vine - ripened tomatoes
on flatbread.
We're all all about mixing caramelized onions into
frittatas, dropping them
on top of super soft scrambled
eggs, and tucking them into omelets.
We like well - seasoned cast - iron pans for our
frittatas — emphasis
on the well - seasoned, which combats crusty -

on - the - side - of - the - pan syndrome.
I threw the filling into an oven - safe pan
on the stove with some
eggs, tossed in just a few basil leaves, baked it a bit and called it a

Frittatas are one of my favourite ways to do
eggs for dinner or for a late lunch
on the weekend.
For four meals make a
frittata, prepared with a layer of sliced sweet potato
on the bottom, topped with eight whisked
eggs, and EVOO and herb sautéed spinach and broccoli.
We usually autopilot to omelets when we think about
egg - and - vegetable breakfasts, but a
frittata gets my brunch - at - home vote for the fact that you can let it cook in the oven while you shower (or lie in bed with the shades drawn until the timer goes off) and because you don't have to worry about wrecking it when you try — and fail — to flip it without making a mess, something most of us have trouble with even when we're firing
on all cylinders.
Mini
frittatas are a variation
on the classic low - carb ham and
eggs breakfast.
In the last of my series of posts
on good - to - go breakfasts I thought it would be helpful to run through my list of «everything else»; that is, all the other things I tend to eat for breakfast when I'm in a hurry that are not
Egg Pots, Porridge Bake or
Frittata.
So if you don't have a muffin tray around to cook up these mini
frittatas, snacking
on a hard - boiled
egg is also a great idea.
