The
frittata gets a healthy makeover by only using
egg whites instead of the whole
egg.
After you pour the
egg mixture on top of the vegetables, make sure the
eggs get underneath the veggies also so the
frittata comes out uniform.
Laura isn't a huge
egg gal, so I don't make quiches and
frittatas that often... but when I do, I
get to dig in mostly by myself!
