I still can't quite believe how thick, fluffy and non-gummy these turn out without any oil, butter or
eggs — they're a really great hearty and healthy option
for any meal, and the crumble baked into the bottom of each
pancake pretty much cries out
for whatever fruit you have on hand.
The mixes are packed with 6g + protein per serving (11g
for the
pancake mix, more if you use
egg whites instead of
eggs!!)

I know I'm crap at poaching
eggs so I usually skip those types of recipes and go straight
for pancakes (duh) and baked eggies!
I am NOT paleo, but I ran out of spelt flour
for the month and came across an amazing «paleo»
pancake that takes either a mashed banana or pumpkin puree, an
egg and spices if you wish.
There was a recipe
for buttermilk
pancakes, but instead of adding the buttermilk, I added fat free
egg nog instead!
Another trick
for lighter fluffier
pancakes is to separate your
eggs, beating the
egg whites until they rise.
+ 1/2 cup
pancake base * + 1 tsp xanthan gum or baking powder + 1 T cinnamon + 1 1/2 tsp unsweetened shredded coconut + 1 T carob powder or cocoa powder + 1 flax
egg ** or regular
egg + 1/2 cup dairy - free milk + 2 tsp apple cider vinegar + 1 tsp vanilla extract + coconut oil

egg, spinach, ham (1) 1/2 once of cheese (2) sugar free
pancake syrup (1) and tangerines

By all means, do not discard the grainy butter; Keep it in a separate jar and use it as a garnish
for pancakes, muffins, scrambled
eggs, salads... let your imagination run wild!
You may have seen a similar flour-less
pancake recipe before (hard to believe that a banana and

pancakes), but I especially like adding protein powder
for the extra boost and flavor.
I love my cast iron pans — I used my lodge logic cast iron

for searing meats — so I have a few of them.
It may make
pancakes a little heavy, so it is not recommended as a quick replacement
for eggs in
pancakes, although it could work well with a little experimentation.

pancakes (with squash instead of potatoes, of course), though the potato version tends to use more

Pancakes are my favorite and
egg nog is my hubbies favorite... so these look like everything right in the world
for my fam jam!
My only dislike was the overly eggy taste, which is fine
for savoury
pancakes, but I like mine with maple syrup so will try experimenting with less
egg yolk and more
egg white.
