Generally I use things like arrowroot or cornstarch where I am making a flaky cookie and the
egg binding is what is needed
instead of the moisture, so it depends on the
recipe you are using.
Here are some of the modifications I made: I oven baked
instead of frying, I added another type of cheese, substituted breadcrumbs for the flour and increased the amount of
eggs in the
recipe.
The muffins turned out amazing... so I think I will carry on with the modification of using pureed bananas in the muffin

Here's what I did... The exact
recipe, except for 4
eggs instead of 5 (to reduce the «eggy taste»), and I used 1 tablespoon of baking soda and 1 tablespoon of vinegar (equal parts, per another post).
I doubled the
recipe, but used only 8
eggs instead of 10, put it an a standard size loaf pan and it came out to the perfect size and is delicious!
If you put in 4
eggs instead of 5 on the top
recipe it works perfect, and doesn't have as much of an eggy flavor.

Also, I misread the

eggs into the dough and used a 6th for the wash, but it didn't seem to matter at all, as the taste and texture was excellent.

recipe is actually very akin to one I've used for potato pancakes (with squash
instead of potatoes, of course), though the potato version tends to use more
eggs and less flour.
Try using 3
eggs if you double the
