I did the recipe without
egg using silken tofu instead.

If a recipe
uses eggs simply to add moisture (and not as a leavening agent, i.e., the recipe calls for baking soda and baking powder in addition to
eggs), you can replace the
eggs with
silken soft tofu.
For recipes that call for a lot of
eggs, like a quiche,
use pureed
silken tofu.
To replace one
egg,
use 1/4 cup of blended
silken tofu or non-dairy yogurt plus 1/2 teaspoon of oil.
