6 Top the cookies with sparkling sugar: Make
the egg white wash by beating the egg white with 1 tablespoon of water until foamy.
Brush the top of each cookie with
the egg white wash and then sprinkle with the sugar.
You can certainly do that, but I prefer to brush the cookies with
an egg white wash and sprinkle them with sparkling sugar instead.
Once they have expanded, brush the tops of the buns with
an egg white wash and pop them in the middle of the oven to bake for 20 minutes.
I had a bit of trouble having the sanding sugar stick to
the egg white wash on the frozen log; next time I might leave the log out of the freezer for a few minutes before attempting this.
