Sometimes I get a little bummed out being the only
eggplant fan in my house.
I never used to be
an eggplant fan, unless it was drenched in a creamy béchamel sauce in a Greek moussaka.

The only changes I made were to peel the

My all time favorite is Lebanese Stuffed Kusa Squash but I'm also a huge
fan of Stuffed
Eggplant with Beef and Pine Nuts, Stuffed Cabbage Rolls and Meat Stuffed Grape Leaves.
I am in love with the lemon ricotta, so in love... I wasn't such a
fan of the
eggplant, mushrooms and zucchini though, maybe I need to cook them a little bit more beforehand.
