Using the back of a large spoon, scrape the flesh (inside) of the
eggplant into a mesh sieve that has been placed
over a
bowl.

over the top.

eggplant into large pieces and place into large
bowl and pour wine and garlic mixture
over eggplant and mix well.

eggplant cubes in a colander suspended
over a large
bowl, generously sprinkle with salt.
