This came especially helpful when I was
right in the middle of
baking muffins and realized we just used the last two
eggs for dinner!
I've wanted one to recommend to my clients and readers, a recipe book that has mastered the
right textures and flavors of classic
baked goods, but without using
eggs!

right.

But if you go into this diet thinking that it's ok to eat these foods «in moderation» (there's a subjective term...), one
egg turns into three or four, one slice of pizza turns into a steak with
baked potato, butter, sour cream, and before you know it, your cholesterol and blood pressure are
right back up there.
Modifications were: - used traditional oats because I didn't have quick cook, just gave them a quick zap in the Nutribullet and kept 1/4 cup unground for texture - omitted hemp seeds because I don't have those - unsweetened applesauce instead of bananas (love bananas but wanted my blueberries to have center stage)- I'm not vegan so I used 2 medium
eggs - replaced 1 tbsp peanut butter with mayo (love peanut butter but not necessarily mixed with other flavors)- threw in maybe 1/2 tsp chia seeds just for grins

Right before
baking, brush with
egg wash and sprinkle with topping.
Most importantly,
baking the
eggs in the tomato mixture allows the yoke to remain runny, while the whites set
right into the sauce, much like they would atop a round brick - oven pizza in Italy.
If you sprinkle the bagels with seeds
right after releasing them from the water, their surface is still pretty sticky and you shouldn't have any problems, but you can always brush them with a little beaten
egg yolk (will give the bagels a little yellowish color after
baking) or
egg white to enhance the stickiness.
Also impressive was the side dish ordered to accompany this entrée — Grilled Asparagus with just the
right amount of char that was topped with a shirred (
baked)
egg and sprinkled with crispy prosciutto bits.
