I haven't found anything that replaces the
eggs completely in
taste or texture, but I've learned to love breakfast stir frys with many of the ingredients that would often be added to an omelet (peppers, onion, cheese, meat, spinach, cheese etc) sautéed
together sans
eggs.
An
egg helps to bind everything
together, and a touch of vanilla extract means your
taste buds won't even recognize that this is a specially made crust.
The tortillas will
taste too
egg - y if you add only
eggs, but they won't hold
together if you add only milk.
