It
seems like you have enough
batter to put them back in (unlike the latkes that are practically hash browns held together with an
egg).
But when it was mixed up, the
batter seemed too runny to be cookies and I was in a hurry and didn't want to fiddle with adding more almond butter or
eggs to get it thicker, so I just went with muffins / cupcakes.
Combine the rest of the dry ingredients and spices, then fold in the wet ingredients, including the seed water (AKA the flax
egg — I know, yum) Add an extra splash of coconut milk if the
batter seems too thick to pour.
I usually start with one more
egg, and then add another closer to the end if the
batter seems to heavy and thick.
