All of the primary dishes in New Mexico cuisine contain chile peppers: sauces, stews, carne adovada,
enchiladas, posole, tamales, huevos
rancheros, and many combination vegetable dishes.
My favourite way to use it is poured over
enchiladas, but you can also use it as a dip for corn chips, on tacos, bbq meats and seafood, with huevos
rancheros, on quesadillas, or pretty much anything you like!
