I've never even bought
enchilada sauce as I always make my own, this one sounds especially good!

Dip each tortilla (both sides) in the
enchilada sauce, fill center with beef (can use ground beef or shredded beef
as I mention above or even shredded chicken or pork) and roll it up.
Just made these stuffed peppers just
as the recipe called for (and the homemade
enchilada sauce) with one substitution, and they were way TOO HOT!
I actually make my own
enchilada sauce, but any supermarket should carry it such
as Loshusan or Sovereign's Supermarket.
