I didn't think I even liked red
enchilada sauce at all for the longest time, not realizing I just didn't like canned red enchilada sauce.
I believe they sell the green
enchilada sauce at any grocery store.
Make this once and you'll never buy over-priced, over-processed
enchilada sauce at the store again!

To assemble
enchilada casserole, I first layer a hearty amount of
sauce at the bottom of casserole dish.
Have made it 3 times since with continuing excellent results — your
sauce is even better than what I recall immensely enjoying
at an excellent Mexican restaurant in Ajijic, Mexico a few years ago, where I had tasted my first authentic red
enchilada sauce.
At this point you could add warm
enchilada sauce on top and sprinkle with cheese and serve, or you could place all the burritos into a 13 × 9 baking pan.
