enchiladas with black beans and whatever other veggies are laying around — usually we get
too lazy to make them into the
enchiladas, though, and just make lasagne-esque layers with the corn tortillas, potatoes / beans / veggies,
enchilada sauce, and cheese.
I like to add some of the
enchilada sauce to the filling, on top of the
enchiladas before baking them and I save a little to drizzle over the top right before I serve
too.
Don't forget —
enchilada sauce often contains wheat,
too.

sauce (not
too hot though) found near the
enchilada sauce.

too spicy for me (3 roasted green chiles, oh my!)
My
sauce was literally
too hot to eat, so I used it to heat up red chile
enchilada sauces.

The «medium» spiced can of
