I love this recipe so much that I intentionally make loads of this chicken
enchilada soup so I can enjoy it throughout the week.

But, I called Red Hen Bread and they had Chicken
Enchilada soup which I had once before,
so I decided on that.
What makes this
soup so quick and simple to prepare is the use of pantry staples like canned beans, corn, tomatoes and
enchilada sauce.

This
soup started as a seafood sauce for
enchiladas, but the staff at the Mountain Road Cafe couldn't keep their spoons out of it,
so W.C. turned it into a
soup.
My favourite combination has always been black beans and sweet potatoes and
so it was my first thought when developing this
enchilada soup recipe.
No black beans,
so used pintos, then added cream cheese cubes during the last hour to make a creamy chicken
enchilada soup (stole idea from your other recipe!).
I named this
soup «
enchilada soup» not
so much to make
soup out of traditional
enchiladas, but because I'm a big fan of using red
enchilada sauce in vegetable - heavy
soups, rather than just all tomatoes.
Pintos are
so good in burritos, tacos,
enchiladas, blended into a
soup.
I mean — we're looking at the following with this recipe: (1) it's a crock pot recipe
so that means you hardly had to do anything but wait, (2) it's a filling bowl of
soup < — YUM, and (3) chicken
enchiladas!!
