Pat or roll the dough into a circle shape that is approximately 1 inch thick.Using your fingertips or the
blunt end of a wooden spoon handle, make several dimples in the top of the dough.
Then I take them out of the oven and use the
wrong end of a wooden spoon to make the depression in the still - soft centers (that's for smaller thumbprints; I use a bottle cap for larger ones).
Essentially you bake a cake then, whilst it's still a bit warm, you poke some holes in it (I poked 16 - 20 holes with
the end of my wooden spoon).
After 30 minutes take
the end of a wooden spoon and «poke» holes in the cake at regular intervals (I did 4 or 5 rows of 5 holes; so 16 - 20 «pokes»).
Poke holes in the top of the cake -LCB- go all the way through the cake -RCB- with
the end of a wooden spoon.
Then flip using a heat proof tool - such as
the end of a wooden spoon or tongs, and fry on the second side for about 60 seconds.
Remove from the hot oil using a large slotted spoon,
the end of a wooden spoon or tongs and place on a flat surface lined with clean paper towels.
Muddle with
the end of a wooden spoon a few times.
Use
the end of a wooden spoon to further «crumble» bacon while cooking.
With handle
end of wooden spoon, mash mint and lemons.
(Tip: if you do not have a thermometer, place
the end of a wooden spoon into the oil.
Muddle the mixture with
the end of a wooden spoon to blend and break up the celery seeds.
I did however find that the mixture is a little sticky so rinsing and drying
the end of the wooden spoon between each tart was helpful.
Using
the end of a wooden spoon gently press in the center and push mixture towards the sides lining the tart shell and leveling off the top edge as per image below.
Use
the end of a wooden spoon or cocktail muddler to bash (or muddle) the mint into the lime juice and sugar.
Let the cake cool 5 minutes, then use a fork or
end of a wooden spoon to poke holes all over the top of the cake.
If you have very, very skittish cats, try feeding them wet food on
the end of a wooden spoon (as a friend - making gesture).
