These healthy
crackers look
like something you might find in a high -
end bakery, but they're actually incredibly easy to make.
Essentially, we've been alternating between dinner salads (
like the kale Cobb Caesar and the popular paella salad), and what I affectionately refer to as a Parisian picnic, which is nothing more than a large round serving board filled with an assortment of cold odds and
ends from the fridge, some bread, pita, and / or
crackers, and whatever seasonal fruits and veggies and are hanging out on the counter.

crackers with melted chocolate poured over them.
But I usually
end up eating some sort of snack combo,
like mezze with flax
crackers and maybe a chipotle bean dip.

like you want to add some decoration to the
crackers, add some holes to the middle with the pointy
end of a chop stick before baking — this give them that «
cracker» look and also some variety in terms of eye appeal as well.
Well - I
ended up doing the crostini from Super Natural Cooking instead, but I
like these
crackers enough that I wanted to share them.

I
like to let them go at least 24 hours in the dehydrator to make sure I don't
end up with soggy or spoiled
crackers.
I wish I had just cycled up my carbs more often, especially using fruits, starchy vegetables and potatoes — toward the
end of my keto days, when the cravings started, I tended to have more «cheat» days eating things
like chips and gluten - free
crackers, which had not been part of my normal diet for a very long time.
