This particular spring
salad is a favourite, for so many reasons but especially because it only takes ten minutes to make — I've been making it in
big batches and
enjoying it almost everyday this week.
I like to make a
big portion of the dressing and keep it in the refrigerator to
enjoy over a few days, since I clearly never get tired of eating this
salad!
I recommend
enjoying a glass of well - chilled pinot grigio on your porch or in your backyard alongside a
big plate of this

A smoothie like this one is perfect for those of us who don't
enjoy a
big bowl of
salad every day — you get lots of micronutrients and antioxidants, in a tasty format that is easy to slug down with breakfast (or anytime.)
But on occasion in the summer we both
enjoy what we call a «
big salad.»
By lunch, however, I am hungry and often prepare a
big crunchy
salad, or
enjoy a bowl of vegetable and bean soup.
Then,
enjoy straight from the jar, or pour
salad onto a
big plate or bowl and
enjoy!
I do love all sorts of fruit smoothies and green smoothies;
big salads that serve as meals; and I've really been
enjoying using a spiral slicer to make «noodles» out of zucchini and other veggies.
This
salad does look fantastic — I am a
big salad eater and always
enjoy seeing how people get creative with theirs.
You can easily make a
big batch of tasty peanut butter and jelly granola to top oatmeal, yogurt,
salads or
enjoy straight up.
Instead I will be making Ren's recipe from now on, especially that even my husband (who is not a
big fan of buckwheat or beetroots)
