Came out quite good, IMO, and I wound up with
enough meat mixture for 10 cupcakes.
I actually kept out
enough meat mixture to make two big meatballs, which I'm planning on using with a pasta recipe.

Add the wine or coconut milk and
enough water to cover the
meat mixture and bring to a boil.
If the
meat mixture doesn't stick together
enough, add a bit more bread crumbs.
To the
meat mixture to have
enough moisture and I used 85 % ground sirloin, I added 1/4 cup of ketchup and just a few small squeezes of mustard.
Stir the pumpkin into the
meat mixture — the flesh will be soft
enough to stir and start to melt into the rest of the ingredients.
Repeat with the remaining
meat mixture; you should have
enough for 12 meatballs.
