The other blog's recipe used 1/2 cup coconut flour, but not

Made these cups — quite dry, found there was not
enough wet ingredients to bind the dry ones.

I would just add the
wet ingredients to the blender first and then add the oats on top so that it has
enough moisture on the bottom to get moving.

enough to combine them?
After it's had
enough time to gel, mix chia together with the rest of the
wet ingredients in a large mixing bowl.
There are a few important points you should always keep in mind when making this bread: weigh the dry
ingredients (cup measurements are not precise
enough), make sure you use psyllium husk powder (whole husks won't work), be quick when mixing the
wet and dry
ingredients together and don't over-process the dough (or it will become clumpy and rubbery).
(It's important to use an electric mixer or the
ingredients won't be able to combine
enough to get
wet.)
Not sure how stevia would work because sugar is a
wet ingredient and I've not baked
enough with stevia to know how it translates as a sugar substitute.
Simply combine flour, baking powder and protein powder (one scoop is
enough for two waffles) in a large bowl and stir until mixed well, then add the
