Try kicking the
temp up to 250 or
even 275 for ribs and make sure you
cook them until they get fully
cooked.
It will catch the dripping fat and make for easier cleanup, it will provide some moisture in the
cooking chamber, and it will serve as a mass of heat to help keep the
temps even.
General consensus is that they are yummy anyway
