Both the cookies and frosting are simple to make, and if you'd like, you can add
dried cranberries or raisins, and
even chopped nuts to the pumpkin - oatmeal cookies with creamy goat cheese frosting.
Not being big on
dried cranberries myself, I actually like these
even better than their inspiration.
Again, if you don't enjoy spices you can omit the cinnamon and if you're not a fan of
dried cranberries you can swap those for a different
dried fruit instead, you could also choose to leave them out entirely or add
even more chocolate chips.

Another idea if you don't want to add onions but want a little crunch is top it with some toasted walnuts or pecans or I
even use a trail mix that has a combination of sunflower seeds, pepitas,
dried cranberries and nuts.
This afternoon I topped the whole shebang with
dried cranberries and it was
even better than yesterday.
Feel free to use walnuts instead of pecans,
dried cranberries instead of raisins, or
even adding
dried pineapples into these.
They did pick out the
cranberries and I suppose if you want to accommodate pickiness you could substitute
dried sweetened
cranberries or
even raisins.
The
dried blueberries add a nice chewy texture and an added touch of sweetness (of course you could sub
dried cherries,
cranberries or
even crystallized ginger).
You can also sub in any other
dried fruits like
cranberries, gojis or
even mulberries if you like.
And although I have used candied lemon and orange peel you can vary this recipe by using other candied fruits or
even dried fruits (
cranberries, cherries, apricots to name a few) especially if you want to make this cake off season when candied fruits are difficult to find.
Beating yourself up for finishing your slice of baby shower cake or freaking out because the kitchen totally put
dried cranberries on your salad
even when you asked for them on the side?

If you want to get
even more creative, I would recommend sautéing up some mushrooms as well, and
even adding
dried cranberries for a little pop of sweetness.
In the future I want to try pistachios, pecans,
dried cranberries, goji berries, and maybe
even some
dried tropical fruit.
